Oversize tires on a Dually

I am due for new tires on my 2008 3500HD. I would like to get larger than stock to increase ground clearance when I am in the hills, not off-roading, just getting wood and such. Does anyone know the largest tires that will fit without rubbing on the frame or fenders?
I also don't really want to lift it so was wondering if it would be possible to cut out the fenders some and leave everything else stock.
